As for human ones, the analysis of the oil also gives indications on its general state of health or indicate where there is a “suffering”. These reports produce a photograph of the instant in which the sample was taken, but also tell the past and the probable future of the oil analyzed.
For example, they can tell us if there were problems with olives during their growth path, as they were preserved after harvesting, as the oil was cured after its production.
The problems that arise in the aforementioned phases, bring defects in the oil that are not always known to be identified with the taste but that emerge clearly from the analyzes. This is why it is important to have an independent tool that allows you to verify that in an extra virgin olive oil there are no defects (and to define it EVO, by law, there can’t be) and to be able to compare the oils together.
We report on this page, for each olive growing year, the results of chemical and organoleptic analyses (Panel Test, when available).
Remember that these analyses are mandatory to be able to label an oil as Extra Virgin (Reg. EC no. 2568/91).

It is enough to keep in mind the 3/4 important values (acidity, peroxides, polyphenols) and when you buy EVO oil from an oil mill or directly from the producer, ask for analyzes to be able to make comparisons and evaluate its quality.
